Get the kids to help with this crumbed chicken recipe. It’s a much healthier snack than KFC because the chicken is baked, not fried.
You need
- 2 cups buttermilk or plain yogurt
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon ground ginger
- 16 chicken drumsticks, with skin (preferably free-range chicken)
- 1–2 packets (250 g each) nachos (corn tortillas chips, not Doritos)
Here’s how
1 Preheat the oven to 200 °C.
2 Mix the buttermilk and the spices in a mixing bowl big enough for all the drumsticks. Coat the drumsticks in the marinade and leave them in the fridge for half an hour (or overnight if you have the time).
3 Use a wine bottle or a rolling pin to crumble the nachos. Roll the drumsticks in the crumbs until they’re completely coated. Lightly shake off any loose crumbs.
4 Put the drumsticks on a baking tray greased with Spray’n’Cook or lined with baking paper. Bake for about 40 minutes or until the crust is golden brown and the juice runs clear when you stick a knife into the thickest part of the drumstick.
5 Serve with sweet chilli sauce.
Tip Spice things up by substituting the nachos for fine breadcrumbs or Corn Flakes, mixed with half a teaspoon of every spice.
