This marinade is also delicious with smaller pieces of chicken, such as drumsticks or wings.
Ingredients
(serves 4)
- 4 chicken quarters (drumstick and thigh)
- ½ cup soya sauce
- ½ cup of whiskey
- 3 garlic cloves, crushed
- 2 cm fresh ginger, finely grated
- 2 teaspoons honey
- 2 tablespoons olive oil
Here's how
1. Score a few deep cuts in each piece of chicken. Mix the rest of the ingredients together and pour it over the chicken. Mix everything and marinate the chicken for two hours. Remember to bring the meat back to room temperature before you braai.
2. Braai the chicken over medium coals for about 20 minutes or until it is almost cooked. As always, the cooking time is determined by the heat of your coals and the size of the meat – so use your judgement.
3. Meanwhile, cook the marinade in a saucepan for a few minutes until it thickens slightly. Generously baste the chicken while you braai it for a final 10-15 minutes until golden brown and cooked through. It’s delicious with steamed rice.
Drive & Camp says: Use the lid of a large braai pan to cover the chicken slightly for the last couple of minutes if you want an extra smokey flavor.
