Rui’s Thai-style fried fish
Ingredients
- 1 kg white fish fillets/hake
- 65 ml oil
- 6 spring onion sprigs (sliced)
- 4 cloves garlic (crushed)
- 1 tbsp ground ginger
- 2 tbsp soya sauce
- 1 tbsp sugar
- 1 tbsp lemon juice
- 2 tbsp chopped coriander
- 1 red chilli pepper (sliced)
Preparation
Step 1: Heat oil in heavy pan. Fry fish lightly on both sides until cooked. Transfer fish to a platter, keep warm.
Step 2: Fry spring onions until soft.
Step 3: Add garlic and ginger, cook on low, stir until soft and golden.
Step 4: Mix in remaining ingredients.
Step 5: Simmer for 1 minute.
Step 6: Pour over fish and serve immediately with baked or fried potato and salad.
